Get to know the visionary who brings flavor, passion, and creativity to every dish at Divieto. He’s not just a chef—he’s the architect of unforgettable dining experiences, the one turning culinary dreams into reality, plate by plate.




If you haven’t met our Corporate Chef, here’s a brief overview of his career, creativity, and love for cooking. Luis began his career in a traditional Chinese restaurant. Shortly after, he became a cook at Mandarin House, where he quickly climbed the ranks to become sous chef. Eager to learn, he went on to work at an Italian-Mediterranean restaurant that expanded from one to three locations. Never one to stop exploring, he had the opportunity to help open a small chain of Italian restaurants in Texas, as part of the Mediterranean-Italian restaurant group.


Sixteen years ago, he joined this project, and since then he has transformed Divieto’s kitchen—shifting it from an Italo-American fusion to something closer each day to traditional Italian cuisine. Last summer, he traveled to Italy, visiting suppliers and exploring new flavors and recipes to bring Divieto to the level he has aimed for since day one. In Italy, he toured the country’s major gastronomic centers. He found the products he had been looking for and immersed himself in the culture and traditions, in order to bring you the very best of Italian cuisine—always with his special touch that makes the flavors explode on your palate.


Luis is an inexhaustible creator and a true cooking enthusiast. A perfectionist and an adrenaline lover who thrives on the fast pace of high-volume restaurants. When you visit us, don’t miss the chance to ask for him.
